to seal or not

Hi,

 We just put in a granite countertop in our kitchen and need info on sealing.

 

It is "sage brush" from Africa and the installer left us some sealer and fine grit steel wool with instructions to use the steel wool to wipe off the residue after it dries.

1)       Should we be sealing this type of granite?

2)       Does this sound like a water based sealer? (I have no label on product)

3)       Is there another sealer we should be using?
