recycled granite countertops

We are in the process of remodeling out kitchen.  My sister and brother in law are in the process of closing on their home.  The buyers want to remodel the kitchen which consists of black granite countertops and cherry countertops.  They proclaim, "it's too dark".  We are in negotiations regarding uninstalling the countertops and cabinets and wanting to use them in our new kitchen.  We would really like to do it ourselves, with the help of a family contractor.  My question is, how difficult will it be to uninstall the granite?  Do you have any "easy" ideas?
